Ingredients
240 g self-raising flour
a pinch salt
2 t baking powder
50 g sugar (for sweeter flapjacks, use 65 g)
2 free range large eggs, separated
1 cup milk
2ml vanilla essence
5ml oil (can be olive oil or canola)
15 ml Dezertino® dessert sauce per 2 flapjacks (Dezertino® Berry Deluxe, Dezertino® Caramelo & Dezertino® Chocolate
Preparation
Prepare the Batter:
In a mixing bowl, combine the flour, salt, sugar, milk, oil, vanilla essense and egg yolks. Stir until just blended — don’t worry about a few lumps, and avoid overmixing.
Whip and Fold:
Whisk the egg whites until they form soft peaks. Gently fold them into the batter. It should be thick that’s what gives these flapjacks their signature fluffiness!
Time to Cook:
Heat a non-stick pan over medium-low heat with a little butter and canola oil. Spoon generous dollops of batter into the pan. When bubbles start to appear on the surface, carefully flip them over they’ll puff up as they cook.
Golden Finish:
Flip once more to ensure both sides are evenly golden brown.
Serve Hot:
These are best enjoyed straight from the pan while they're warm and airy.
